Message: my trucks been still for two years. Im about to go and drive it 1000 miles to my home in N.C. What all should i look for?

It would be a good idea to change the oil and anti freeze first.
Check all the hoses, upper and lower radiator hoses, heater hoses as well, inspect all fan beats for cracks, if you see any replace them.
Check all tires including spare, inspect the side-wall and tread for any signs of weather checking (including the spare). Make sure all tires are at recommended pressure, most radial tires run about 30 to 35 psi. The slightly higher pressure will also help gas mileage.
Depending on your year of truck, replace any fuel filters, the Gen 2 dakotas 92 thru 96 has a fuel filter near the frame on the drives side of the truck, I know the Gen 3 97 and newer do not.
Set up an emergency kit, get and keep an extra jug of ready mix antifreeze, emergency radiator hose rrepair kit or carry an extra upper and lower heater hose, carry spare fan belts, if you replace yours keep the old one for emergency use it's still in good shape. Keep a can of stop leak in your kit. I also carry a battery operated tire inflator and tire gauge just in case.
Maybe XMR can chime in here he is a fllet manager and I'm sure he could give you some insight on what to look for.
I know I have always checked out and prepared my truck or car before taking a trip and had very few break downs on the road.
I completed a 6000 mile trip last summer in my 92 Dakota 4x4 thru Washington, Oregon California, Arizona, New Mexico, Texas, Colorado, Wyoming, Montana, Idaho, and back to Washington. Any time I stop for gas, I always check the oil. When I spent the night at a motel, I always would check air pressure, inpsect under the hood and walk around the vehicle and inspect for any kind of damage.
Carry a cell phone and get AAA road side assistance or All State Motor club if you travel much.
Take care of your vehicle and it will take care of you.
92 and 97 Daks both with many mods.

Message: the things that I have found after a vehicle sits for a while that go wrong are. The battery is #1, condensation in your fuel is #2. Tires that go boom in the night due to deterioration or low air pressure. There can be other problems but these are the most common.
