Subject: R/T headers, whats the difference?

I was getting ready to get a set of headers, and was just curious, as there are tons of varieties available, what the differeces were between some of them, like the length, what differences do they make? I'm aware of differences in material, SS ceramic and such, and know that some require different y pipes, and some removethe cats, but was unclear what differences in torque and HP the length specifically affects... and what ones may affect the alignment.. I know that some of them block off the adjustment bolts on the upper control arm which can prevent getting alignments done.
What're you using, and what do you like, dislike about em?

OH, I should add that I have a 2001 RC R/T, and that raises another Q, I've heard that if I removethe cats I'll end up with a check engine light on, from the O2 sensors, what can I do to get rid of that from happening if I remove my catalytic converters?
