I recently purchased a 99 Dakota Sport with the 5.2 engine. This is my first truck, all of my other cars were little japanese cars where the engine temp never changed. I am noticing frequent fluxuation of the engine temp (between 185-210, depending on if I have the A/C on or not) After the truck has been turned on a couple times during the day, the temp normally goes up to about 205 and stays there, sometimes gets a little hotter then comes back down. Is this normal? I am looking at installing a 180 t-stat to keep the temp down. I live in Reno, NV where temps today were about 105 degrees. Let me know, thanks!

I have a '99 with a 5.2 liter engine and air conditioning. I can't say that I have ever noticed the flucuation you described but it does not alarm me at all. It is almost cetaintly the difference between the fan kicking on and then cutting off. Living in Reno as you do I would expect it to cycle more frequently than for me living in western Oregon.

I would not get different temp rated thermostat. There are too me things that depend upon the temperature range that the engine is designed to run between. The engine control module for one.
