I've had my 2000 4.7 CC for a few years and love it. That was my second Dakota and will keep getting them if they remain as dependable as they have been for me. I also just picked up an 05 Quad Cab 4.7 last month and really enjoy it. But it's interesting to see the differences when driving them back to back on some days.
The 05 is a LOT more solid and you can really feel the extra bulk. It's quieter, roomier and a decent handler. I like the visibility and the front seats are very comfortable and seem about an inch or so wider than the older ones.
The 00 feels a lot sportier. The lighter weight plays a big role but the entire engine/transmission package seems to behave differently. It is more eager to kick down a gear for passing and the transmission itself feels like it has shorter gearing. Although they both have the 3.55 rear gear, the 00 model turns about 2300rpms at 70 versus 2000rpms for the 05 model. It comes out of a hole pretty quick and will rocket up to the speed limiter on the interstate when passing suprisingly fast. I almost wonder if the previous owner snuck in the HO cams or something else.
Sometimes I can't decide which one I like driving more. The 05 is just nice to drive. But the 00 gets me there a bit faster.

I went from an 00 Sport CC to an 03 SLT QC and noticed that the 00 CC felt faster/quicker by the butt dyno. The 00 also cruised at 2300 rpm whereas the 03 cruises at 2000 rpm. I think the major differences between the trucks is the 45RFE transmission in the 00 compared to the 545RFE transmission in the 03 (crusing RPM)and tuning of the PCM (quickness). I know my 00 didn't have the PCM "death flashed", but think it was incorporated into the 03's PCM programming.

Well, I traded in a '97 CC 4x4 V8 for an '05 CC 4x4 V8. The new truck is MUCH quieter, MUCH better ride and feels like it has more 'heft'. The '97 did feel like it was a tad quicker out of the chute.
Different experiences overall - sometimes I prefer the new one, sometimes I prefer the old one.
